Pumpkin Muffins

Earlier this fall I had prepared roasted pumpkin and froze the pumpkin meat. I wanted to post some recipes to use with pumpkin. This recipe calls for no eggs and very little ingredients.

Pumpkin Muffins

3 cups self rising flour

2 cups brown sugar (light or dark)

1 cup white sugar

1 tsp salt

2 1/2 cups pumpkin puree

2-3 tablespoon ground cinnamon

2 tablespoons nutmeg

1/2 teaspoon baking soda

1 1/2 cups oatmeal

Preheat oven to 350. Mix all the ingredients in a medium size bowl. Pour in lined muffin pan or grease the muffin pan with oil to keep the muffins from sticking. Bake 15-20 minutes or until you can stick a toothpick in the center and it comes out clean.
